Lemon and basil fool
200ml double cream
200ml Greek yoghurt
300g lemon curd
Handful of basil leaves,
finely chopped
Handful of raspberries, crushed
Whisk cream to form soft peaks.
Fold in yoghurt, lemon curd and basil.
Chill. Top with crushed raspberries. Serve.
75g icing sugar
Juice of 1 lemon
150ml double cream
150ml Greek yoghurt
50g dark chocolate
Put bananas, sugar and lemon juice in blender. Purée.
Whisk cream to form soft peaks. Fold in yoghurt and fruit purée.
Chill. Grate over chocolate. Serve.
Mango fool
2 ripe mangos3 tbsp icing sugar
200ml double cream
200ml Greek yoghurt
2 mint sprigs, finely chopped
1 tsp vanilla extract
Peel and stone mangos. Put two thirds of the fruit in blender with 1 tbsp icing sugar. Purée.
(Sieve if you can be bothered.)
Whisk cream to form soft peaks.
Fold in yoghurt, mint, vanilla, remaining sugar and fruit purée.
Decorate with remaining fruit. Chill. Serve.
The name of this food may sound foolish yet this is a very delicious and healthy treat, eh. :)
